Healthy Summer BBQ Recipes

FB Header The hot days of summer are a time of celebration, holidays and backyard barbeques.  You may feel like you have to ditch your healthy eating when you commit to attending or throwing a BBQ, but that couldn't be further from the truth!

There are countless ways to eat healthily at your friend’s BBQ. If you are hosting the event, you have a tremendous amount of healthy and delicious options to choose from while planning your menu.

Here are a few healthy menu options for your summer BBQ. These recipes are slimming, filling, tasty and perfect for weight loss goals and overall wellness.

 

APPETIZERS

 

Guacamole

Ingredients:

3 avocados, mashed

1/4 cup cilantro, chopped

1/2 onion, chopped

1 tomato, diced

2 tablespoons lime juice

Jalapeños (optional)

Directions: Mix all ingredients together and enjoy!

 

Watermelon Pizza

Slice watermelon and cut into triangles, like a pizza.

Drizzle with balsamic vinegar, sprinkle feta cheese (optional), sprinkle almonds or walnut slices. Top with any other desired fruits such as pomegranate seeds, strawberries or blueberries.

 

ENTREES

 

Grilled Vegetables

Simple as that, but oh so delicious! Drizzle veggies of choice (I highly recommend zucchini, red pepper, and tomatoes) with olive oil and fresh herbs. Grill to preferred tenderness.

 

Portobello Burger

Drizzle olive oil over Portobello caps and grill until cooked through. Use Portobello caps as a burger bun. Place burger of choice (veggie, black bean,) between Portobello caps. Top with toppings of choice and enjoy!

 

SIDES

 

Cucumber Dill Salad

Ingredients:

3 cucumbers, sliced

1 white onion, sliced

1/3 cup apple cider vinegar

1 teaspoon minced garlic

1 stalk green onion, sliced

2 tablespoons freshly chopped dill (if you don’t like dill use mint).

Directions: Toss all ingredients and chill before serving.

 

Chickpea Tomato Salad

Ingredients:

1 can garbanzo beans, drained

1/2 red onion, sliced

1 tablespoons garlic, minced

1 cup cucumber, chopped

1/2 cup parsley, chopped

2 cups cherry tomatoes, cut in halves

1/3 cup olive oil

2 tablespoons white wine vinegar

Freshly cracked black pepper.

Directions: Toss all ingredients and chill.

 

Avocado Potato Salad

Ingredients: 2 pounds small red potatoes

3 avocados, mashed

1/2 cup onion, chopped

1 tablespoon garlic, minced

Freshly cracked black pepper

Directions: Cook potatoes until tender. Cut potatoes and stir in remaining ingredients.

 

DESSERTS

 

Chocolate Banana Nice Cream

Ingredients:

2 bananas

3 tablespoons cacao powder

Directions: Slice bananas and freeze for 30-45 minutes. Blend frozen bananas with cacao powder. Blend until smooth and top with any additional desired toppings.

Grilled Pineapple A La Mode 

Ingredients:

Pineapple cut into rings

Vegan Coconut milk Ice Cream

Directions: Slice pineapples and grill briefly until warm. Top with your favorite vegan coconut milk ice-cream and sprinkle with honey.

Waiting For Baggage (Detox Friendly and Delicious Recipe Inside)

Fresh Lemon Blueberry Bowl  

I was at the airport baggage claim the other day waiting for my baggage you arrive. I looked around as everyone was watching the conveyor belt waiting for their baggage and staring at the hole where the suitcases would appear.

It got me to wonder how many people are looking at the conveyor belt of life waiting for life to happen instead of making it happen.

When I saw the movie The Secret I was floored by the idea that we can imagine and visualize what we desire in life and get it. So that’s what I did. I visualized and waited and waited and waited and ziltch, nada, nothing. I got nothing.

I was waiting for a miracle but forgot to put myself in the miracle. I didn’t take action after requesting my desire.

I had an ah-ha moment in a yoga class when my favorite teacher and mentor Dana Flynn said, “ You can’t hope for a boyfriend and then think he’s going to fall out of the sky in your lap while you’re sitting down meditating. You have to go and be out in order to meet him.” She laughed with her funny giggle as my heart sank.

Wow…that is what I’d been doing…mediating and wishing upon a star for my beloved to show up while not showing up in the world.

Have you been doing this with your health/wellness/weight loss goals? Are you hoping to feel great in your body but still sitting on the couch? I know a woman who is always taking about how she wants to lose weight and get in shape yet she makes mac and cheese and eats it along with refined white carbs but thinks she is going to lose weight.

It is the perfect sabotage like a soap opera, wanting one thing and then doing the opposite or not doing anything at all…just like I did.

You can rescue yourself out if this circle of desiring but giving no energy (action). Just do something even if you don’t know what to do? Take an action after stating what you want. Don’t wait for Monday to start eating healthy. Don’t wait to get your healthy lifestyle in gear until the cookies you baked are eaten. Throw them out and start now.

Procrastination never wins. It keeps you in the hamster wheel of life. Don’t wait for your baggage to come around on the conveyor belt of life…go get started now!

Here’s a zinger… taking action is the catalyst for your desire to manifest.

So get off the couch and make a meal plan for the week. The more you plan for your health, wellness and weight loss goals, the more room you have for spontaneity of life.

If you are busy, get your family involved so they learn how to make thing happen, too.

Serves 2

2 cups fresh blueberries

2 tablespoons ground flax seeds

Juice of 1 lemon

1 tablespoon honey

2 tablespoons unsweetened, shredded coconut

MIX THE INGREDIENTS: Place your blueberries in a bowl. Top with ground flax seeds, lemon juice, honey, and shredded coconut.

Staying Healthy On Vacation

pool-690034_1280 I was on FB the other day reading a post from a long time friend. She was talking about while on vacation she basically ditched her “diet” and gave into all the crap food around her…donuts, ice cream, burgers and fries, heavy drinking and hangovers cured by bacon and waffles.

 

Here's my question to you. What made vacation the free-for-all to forget all you have worked so hard to do to keep your body in shape and HATE yourself after vacation? The maxi dresses that you wore on vacation flowing freely covered up the damage and you didn’t feel the bloat and weight gain until you put back on your pants that won’t zip. YIKES…although I’m sure there are other chose words being said in a panic.

 

Listen, I’ve been there in my past too. When I was young and in my teens and visiting Gatlinburg, TN with my family, I gobbled up all the fudge we bought at the at the fudge shop forgetting that if I wanted fudge that bad I could make it. I ate the rocky road fudge like it was going out of style along with funnel cakes, fries and Diet Coke. Go figure. I was young and would stuff anything sweet into my mouth that didn’t eat me first. I remember feeling gross and of course bloated but I kept shoveling it in thinking I wouldn’t get to eat the treat ever again. Thank God that is my past.

 

Vacation is not the time to let it all go people. A healthy lifestyle supports you wherever you go. Vacation, traveling for work, TGIF happy hour and any and all holidays.

 

It’s a choice you make in life. I promise you there are healthy choices at the beach, other countries, and different cities or at the bar.

 

I challenge you to let the healthy lifestyle you’re creating right now to be the way you are on vacation.

 

Sure you can have a glass of wine at night while relaxing in paradise, but two or three every night??? It’s not like you‘ll never get to have a glass of wine again. Why over do it and regret it?

 

Yes, try the new foods of that location but you don’t have to try all the fried foods for every meal. Stick to one heavier meal and keep the rest light and clean.

 

Dessert….ya’ll know I love dessert but it’s not health sustaining having sweets every night during your travels. Of course allow yourself a sweet treat, but having dessert every day will pack on the pounds like Rocky boxes…fast and with furry.

The midnight buffet isn’t here for you to get your moneys worth, it’s there to get you fat and addicted to the heavy sugar and fat laden foods.

 

I’m keeping it real here.

 

Do you really want to get home with great memories of your travels but feeling disgusting inside because you ate foods that weighed you down…literally? I don’t think so.

 

It easy to vacation in style while sticking to your healthy lifestyle by eating fresh fruits and salads during the days and stick to your heavier meals at night.

 

These days, restaurants have many healthy options that are tasty and filling and will keep you hot and sexy while on vacation and after.

 

To give you a tip, the more sugar, alcohol and “bad fats” you eat the older you’ll look.

 

I don’t know about you, but I want to be the woman who gets back from vacation looking rested relaxed, sexy and beautiful not haggard, hung-over and carrying 10 extra pounds.

 

Remember to eat fresh fruits and vegetables get in some fitness, indulge in moderation and pare down your portions of heavy foods.

 

I’m not here to tell you not to enjoy your vacation and not to try the delicacies of where you have traveled. I want you to remember you have the control within you so you can try and treat yourself with different foods but don’t let splurging take the lead. Get my drift?

 

Remember, who you are on vacation is who you are at home. So let the passion you have at home for healthy meals and a vibrant lifestyle travel with you on vacation too. Enjoy the foods, drinks and treats of your travels while keeping your self full of nutritious foods too.

 

 

Swiss Chard With Garbonzo Beans For A Hot Summer Night

Swiss chard with garbanzosjpg It’s HOT, HOT, HOT and I love it. During this glorious time of the year I keep everything simple and extremely fresh.

I eat a lot of fruits, raw veggies and salads to help combat the heat. Every once in a while I want a nice cooked, hot meal for dinner during the summer. That’s why I created this great Sautéed Swiss Chard with Garbanzo Beans recipe.

It’s a dish that will not keep you in the kitchen too long, gives you ample amounts of fiber and has an impressive phytonutrient profile. This leafy green vegetable has not been studied as much as the beloved Kale but still packs a punch. It’s loaded with Vitamin C to help fight off those pesky summer colds. Full of iron, this green vegetable will help keep you strong as Popeye

The below recipe is pretty basic. There is plenty of room to play with spices, herbs and maybe more garlic to create your own version of the dish.

Here is a bonus – this is a detoxing, weight losing, healthy living, and lifestyle friendly recipe to keep you looking good in your summer wardrobe.

 

SAUTÉED SWISS CHARD W/ GARBANZO BEANS

Makes 4 servings

1 tablespoon coconut oil

1 small onion, chopped

1 bunch Swiss chard, thinly sliced

2 garlic cloves, minced

1 15-ounce can of garbanzo beans, drained and rinsed

Sea salt and pepper

Add coconut oil to a hot pan. When the coconut oil is melted, add the chopped onion. Sauté for about 3 minutes until the onions are translucent. Add the Swiss chard. Sauté until the Swiss chard is wilted. Next, add the garlic, garbanzo beans, sea salt, and pepper. Remove from heat and serve.

* Please add any spices you’d like to up the jazz up the dish.

Summer Fun and Bloating...Huh?

girl-1154734_1280 Summer is here and this time of year we want to look good in our tank tops, bathing suits and pretty dresses. We want to look our best and with a flattering figure. But some of the foods we eat during the summer can bring on the very thing we are striving to release…belly bloat.

I want to offer some easy suggestions to follow to keep your tummy slim and flat to keep you looking sexy during the hot season:

 

  1. Stay away from sodas or anything with carbonation.
  1. Do not eat artificial sweeteners (for belly bloat and general health).
  1. Cut way back on your sugar intake and that includes sugary cocktails.
  1. Excess sodium from chips and salty foods will keep you looking puffy. Instead substitute the chips with chopped vegetables sticks.
  1. Gluten and dairy for many cause very uncomfortable digestive disorders and is best to eliminated if you’re feeling like you’re carrying excess water and bloating in your middle section.
  1. If you‘ve been taking antibiotics then your gut is very sensitive and vulnerable and taking probiotics is a must to get your gut back in shape. This is a slow and long process.

 

If you feel there’s nothing summer-like left to eat I’m here to help. Here’s a list of foods to eat to help your body digest well and stay full of nutrition with a flat belly are:

 

  1. High fiber foods: Fruits and veggies are my go-to for any meal and snack.
  1. Drink plenty of water to stay well hydrated.
  1. If you must have something sweet, and I must, snack on a dark chocolate bar or something sweetened with natural sugars such as raw honey and maple syrup.
  1. Food that are helpful to fight bloating are fermented foods such as kimchi and sauerkraut, coconut kefir. All these delicious foods help rebuild your gut flora for a healthy gut.
  1. Enjoy the lighter foods of summer and dine on salads and lightly steamed vegetables.
  1. Sip on herbal teas. Peppermint, ginger, dandelion root and licorice tea are deeply hydrating and healing to your insides.
  1. Remember to exercise to burn off fat and excess sugar that would be stored as fat.
  1. Yoga: any yoga style will be extremely helpful, especially twist. Yoga and will also help you be more mindful of what you eat with a daily and dedicated practice.

 

The summer months are meant for you to let lose a little and uncover after the winter chill had us wrapping up our beautiful bodies to stay warm. If the lists above are too much to think about changing, then start with one thing at a time. Remove one foods or bloating culprit while adding in one. I always say baby step are the way to long lasting health and it’s the same with anything you want to change including belly bloating.

Quick and Healthy Summer Salad

If you love a quick lunch, this recipe is for you.

All it involves is chopping some veggies, mixing up a delicious dressing and wa-lah…an instant lunch that is healthy, great for the warmer weather and perfect for your waist line.

I’m busy with many emails, teaching yoga, coaching clients and living a full life so I don’t want to take too much time in the kitchen this summer to slave over the hot oven or stove. I’m going to keep it simple and suggest you do to. Your body naturally wants cleaner, easy to digest and cooling foods during the hot summer and this salad is perfect.

If you want to lose weight or maintain your gorgeous body, then start chopping and eating.

CHOPPED VEGGIE SALAD W/ CREAMY AVOCADO DRESSING

Makes 4 servings

4 cups red cabbage, thinly sliced

1 large cucumber, peeled and diced

1 large celery rib, chopped

1 large apple, chopped

Creamy Avocado Dressing (see recipe below)

¼ cup pumpkin seeds

Add the cabbage, cucumber, celery, and apple to a large bowl. Coat with the Creamy Avocado Dressing. Mix well. Top with pumpkin seeds.

 

CREAMY AVOCADO DRESSING

2 large avocado (preferably Hass variety)

1 garlic clove

Juice from ½ lemon

¼ cup extra-virgin olive oil

Sea salt and pepper

1 to 2 tablespoons of water (to thin out the dressing, if needed)

Add the avocado, garlic, lemon juice, olive oil, sea salt, and pepper to a food processor or blender. Blend well. Add water if needed to thin it out. Serve immediately with your salad.

 

Eating healthy in the summer is so easy and, to be honest, delicious. There are days for gourmet recipes and meals but summer is the time to simplify and enjoy.
