Snack On Vanilla Protein Balls

It happens to the best of us whether we are tired, stressed, missed lunch or just hungry again. We know that a candy bar is not the solution to our munchies but it satisfies that demanding craving. Unfortunately, resorting to candy to satisfy that longing for sugar can lead to weight gain, sugar crashes and sugar addictions. What do you do when you need something to help you through the afternoon?

My go-to snack is always a protein ball. They taste wonderful and are the perfect portion to holdover hunger pains until dinnertime. They are also great for a before or after workout snack. These little balls of goodness are filling and tasty since they are made with protein, fiber and dates to sweeten them. They will help you with your weight loss goals because they are “real food” and not processed substitutions wrapped up in shiny, appealing packages. These protein balls are easy to make and grab on the go. This is a recipe you must try!

Vanilla Protein Balls – makes 8 balls

½ cup pumpkin seeds, soaked

8 Medjool Dates, soaked

1 teaspoon Vanilla Extract

⅓ cup protein powder

¼ teaspoon cinnamon

½ teaspoon nutmeg (optional)

⅛ cup water

¼ cup cocoa (optional)

SOAK THE INGREDIENTS: Soak pumpkin seeds and dates in water for 15 minutes and drain.

COMBINE THE INGREDIENTS: Place pumpkin seeds and dates in the blender and blend until well combined. Add water slowly as needed. Place mixture into a bowl and add protein powder, vanilla extract, cinnamon and nutmeg.

MAKE THE PROTEIN BALLS: Once ingredients are mixed well, roll into 8 even balls. Serve or store in refrigerator.
